Description

In a few short steps you too can have the most flavorful and yummy lentils ever!

Ingredients

  • 1 pound Dry Lentils, Washed And Picked Through
  • 1 can (about 14 Oz. Size) Lite Coconut Milk
  • 28 ounces, fluid Vegetable Stock
  • 1 whole Onion, Chopped
  • 2 cups Chopped Carrots
  • 3 cloves Minced Garlic
  • 1 Tablespoon Grated Fresh Ginger
  • 1-½ teaspoon Yellow Curry Powder
  • 1-½ teaspoon Garam Masala
  • ½ teaspoons Cayenne Pepper
  • 1 teaspoon Salt
  • ½ teaspoons Pepper

Preparation

Combine all ingredients in a slow cooker. Put the lid on and cook on high for 3-4 hours until the liquid is absorbed and the lentils are cooked through. Serve hot over rice or (my personal favorite) a big bed of spinach!
