Description

Slow cooked in beer – tender pork carnitas.

Ingredients

  • 1 pound Boneless Pork Ribs
  • 1 package Taco Seasoning
  • 2 whole Jalapenos
  • 4 cloves Garlic
  • 4 Tablespoons Vegetable Oil
  • 2 cans Any Light Beer
  • 1 package Corn Tortillas

Preparation

Slice the pork ribs into bite size chunks. Coat in the taco seasoning. You don’t have to use taco seasoning, you can use a fajita seasoning or whatever seasoning you normally use for tacos. I’m lazy and love prepackaged things.

Slice 2 jalapenos in half and smash the 4 garlic cloves.

Heat oil in a dutch oven or a large pot. Brown pork on all sides. You might need to work in batches; don’t over crowd the pot.

Once all the meat is browned, return to the pot and cover with the 2 cans of beer. You might need to add a little water or broth if the meat isn’t fully covered. Toss in the jalapenos and garlic cloves.

Bring to a boil, then reduce to a low simmer. Simmer covered for at least 2 hours. You want the carnitas to be tender and falling apart.

Once they are tender, uncover and turn the heat up to reduce sauce. Serve with corn tortillas, chopped onion, tomatoes and any other garnish you like.
