Description

My version of a sloppy joe, only with “moe”! Moe vegetables, moe taste and moe pizzazz!!!! One evening making my dry curry recipe I got frisky and threw in a can of diced tomatoes and tasted it BEFORE adding the curry seasoning, and Sloppy Moe was born!

Ingredients

  • 2 cloves Garlic
  • 1 whole Large Onion, Diced
  • 2 whole Carrots, Diced
  • 6 whole Bell Peppers, Diced
  • 1 Tablespoon Oil
  • ½ pounds Ground Pork
  • 2 cans (14 Oz. Size) Diced Tomatoes
  • ⅓ cups Worcestershire Sauce
  • 2 cubes Bouillon
  • 1 Tablespoon Soy Sauce
  • 1 dash Salt And Pepper
  • 6 whole Hamburger Buns

Preparation

Peel and chop 2 cloves of garlic.

Dice onion, carrot, and bell peppers.

In a large frying pan, heat about 1 Tablespoon of oil on low. Add garlic and slowly warm it until it starts to sizzle in the oil.

Turn up the heat and toss in the meat, cooking until mostly browned (if you aren’t using lean meat, you may want to drain off any oil at this point).

Add to browned meat the diced onion, carrot and bell peppers. Stir fry on high heat until veggies are tender (about 3-5 minutes). Season with salt and pepper to taste.

Add both cans of diced tomato, worcestershire sauce and 2 cubes of bouillon. Simmer on medium/high heat while all those flavors mingle and party and get to know each other. Continue cooking down until most of the liquid is gone (about 10 minutes or more) stirring frequently.

Taste at the end to see if you need to adjust the flavor. I often add a Tablespoon or so of soy sauce at the end.

Serve on warm buns!

If you have leftovers, it is awesome with bow tie noodles the next day with some parmesan cheese on top!!!

I honestly only tried this because I was looking for a recipe to use up the large number of bell peppers that I bought at Aldi for an amazing price! This was really good and full of flavor and I’m not a dietician, but goodness it must be healthy with all the vegetables! Thanks for sharing and I think we’ll try it with pasta like you suggested – it would be good too on baked potatoes as well I’m sure!
