This is as simple as it gets!
Turn on the oven to 140F. Salt and pepper the lamb and place in a roasting pan with thyme and plenty of garlic on top of and under the meat.
Place in the oven at about dinnertime the day before and it’ll be ready 24 hours later. Finish by turning up the temperature to 400F for about 10 minutes to brown the meat. Let it rest before serving.
