Description

Delicious skinny turkey reuben sandwich aka Rachel Sandwich without compromising taste. The Russian dressing is great! This sandwich is simple, quick, and so tasty. Try this sandwich if you enjoy a lighter taste than the traditional reuben or if you just feel like switching things up a bit!

Ingredients

  • FOR THE RUSSIAN DRESSING:
  • 1 cup Miracle Whip Light
  • 1 Tablespoon Horseradish
  • 1 teaspoon Worcestershire Sauce
  • ¼ cups Ketchup
  • 1 teaspoon Shallot, Minced
  • 1 Tablespoon Parsley, Minced
  • FOR THE REUBEN
  • 4 slices Rye Bread
  • 2 teaspoons Olive Oil Spread
  • 2 slices Swiss Cheese
  • ½ cups Sauerkraut Drained
  • ½ pounds Deli Turkey, Sliced

Preparation

For the Russian dressing:
Combine Miracle Whip, horseradish, Worcestershire sauce, ketchup, shallot, and parsley in a small bowl and mix until well incorporated. Set aside or refrigerate until ready to assemble sandwiches.

For the sandwiches:
Preheat oven to 400ºF.

On a baking sheet, lay out lightly toasted rye bread. Thinly spread ½ teaspoon olive oil spread and Russian dressing on each slice of bread. Add Swiss cheese, sauerkraut, and turkey to half of the slices of bread. Cover with remaining slices of bread and add remaining ½ teaspoon olive oil spread to top of sandwich.

Bake at 400ºF for 12–15 minutes or until golden brown.
