A skinny version of the classic Mexican pizza! It might just be better than the original.
Preheat oven to 425°F
Using a steak knife poke tons of tiny little holes into each tortilla, spray both sides of each tortilla with cooking spray or spray olive oil. Place each tortilla on a foil lined baking sheet being careful not to overlap too much. (You may have to do these in a few batches.)
Bake the tortillas for about 6 minutes, flip them and then bake about 2 more minutes. Watch and flip as they turn a nice golden brown. When done remove the pan from the oven and cool the tortillas on a wire rack. Leave the oven at 425°F
Meanwhile, in a skillet over medium heat brown the turkey meat. Once the meat is browned add taco seasoning and water. Let the mixture simmer until cooked through. Set aside.
Put the beans into a microwave safe bowl and heat them for about 60 seconds. They just need to be warmed. Spread some of the warmed beans onto a baked tortilla. Top with seasoned taco meat. Place another tortilla on top of the meat. Spoon about 3 tablespoons of the restaurant sauce evenly onto the top of the tortilla. Top with cheese. Put the tortilla onto a baking sheet.
Repeat the steps for the remaining ingredients.
Bake each “pizza” for about 3-5 minutes or until cheese has melted. You could also put them under the broiler but if you do, you should watch them like a hawk. Remove from oven once cheese is melty and oozy.
Let them cool slightly, top with your favorite toppings such as sour cream, guacamole, salsa etc. ENJOY!
