Quick, easy and yum-o! One-skillet dish, so the cleanup is a snap, too.
Cut onion and bell pepper into small chunks and saute in butter for 3-5 minutes. Add in sliced sausage and zucchini, saute another 3-5 minutes. Pour in V8 Juice and season with garlic and oregano (I also like to add a bit of salt). Pour in uncooked rice, stir all together, then cover and simmer for 20-30 minutes.
