Description

This is by far one of the best Chicken & Rice recipes I have ever made. I love that it only requires layering into your favorite casserole dish. A huge thank you to my sweet friend Jennie for this fantastic recipe. It is definitely one of my go-to recipes.

Ingredients

  • 1 stick Butter, Melted
  • 1 package Boneless Skinless Chicken Tenders, About 1 Pound Or Enough For 6 Servings
  • 1 cup White Minute Rice
  • 2 cans (10.75 Oz. Can) Cream Of Chicken Soup
  • 2 cups Milk
  • Salt And Pepper

Preparation

Preheat oven to 375 degrees.

You will want at least a 9×13 casserole dish. You may have to adjust the cooking time depending on the depth of your dish. I use a large oval Corning Ware dish that doesn’t have great depth.

First melt the stick of butter in the microwave (time varies). Place the chicken tenders in the casserole dish.
Season the chicken well with salt and pepper. I also sometimes use Cavender’s or Mrs. Dash salt-free chicken seasoning (it will be bland if you skip this step!).

Pour the melted butter over the chicken, covering well. Sprinkle the cup of rice evenly. Spread the cans of cream of chicken on top of the rice evenly. Now pour on the milk. (I sprinkle a little more pepper on top of the milk.)

Yes, it will look weird with that milk poured over the top, but something miraculous happens during the cooking process. It all mixes together and becomes this gorgeous casserole that is perfect for potlucks.

So I made this for dinner tonight…loved how quick and easy this was! As a mom of two very young boys and a wife to a very busy hubby, we really thank you for posting this. Made my night so much smoother.

This was yum!

I modified it a lot…instead of 2 cans of cream of chicken, I did one can of cream of celery, 1 can of cheddar cheese soup and I also used leftover rice rather than minute rice.

I also added a layer of vegetables (peas and carrots) on top of the rice. I let it cook then topped it with cheese to melt and it was a hit!

Made this last weekend and it couldn’t be easier! Had most of the ingredients already in the pantry and talk about an easy clean-up! A great recipe to have on hand!

I’m not sure what I expected…but it wasn’t this. I ended up with something on the side of thick soup and its true what they say..you eat with your eyes. This looked awful and while the flavors weren’t bad, we couldn’t finish it. I’m not sure if it was something I did but it was really simple to follow so I don’t think I messed up there. I’ve never made a chicken and rice casserole before so wasn’t sure what to expect. I think perhaps one can of soup and 1 cup of milk would have been ample…unless its meant to be soupy. :(

I made this for dinner tonight….I used Old Bay seasoning on the chicken and it was YUMMY!!! The butter was kinda sitting on top of the casserole when it came out of the oven but I just mixed it in….

This was very delicious! The chicken turned out very juicy and tender. I didn’t have cream of chicken soup so I used cream of mushroom and placed fresh sliced mushrooms on top of the rice before adding the soup to make mushroom rice. I’m really wishing I had leftovers right now…

This was delicious! I had sprinkled a little cheese on top after I pulled it out of the oven, but was pleasantly surprised to figure out that it really didn’t need it at all. It’s delicious as is! Pleased the whole family and was easy to put together (I doubled it!) Thanks for a wonderful recipe.

This is super delicious! A great hit with my family of picky eaters and my husband even requested leftovers which is not his usual thing. I did add french onions to the top but it would have been just as yummy without them. I love how easy it is too. Great recipe!
