Description

A super easy sandwich perfect for summer.

Ingredients

  • 4 slices Bread, Any Sliced Bred You Like
  • 2 Tablespoons Extra Virgin Olive Oil
  • 3 whole Ripe Tomatoes
  • 1 teaspoon Salt
  • 1 whole Avocado, Medium Size
  • 1 whole Red Onion, Small
  • 4 pinches Garlic Powder

Preparation

First drizzle the bread with a little olive oil and toast in a 400-degree oven until the bread is crunchy. While the bread is toasting, start slicing the tomatoes. Now would be a good time to sharpen your knife; I personally like paper-thin tomato slices and to achieve that goal, you need a really sharp knife. Put the tomatoes in a bowl and season with sea salt and olive oil. Slice the avocado and onions into very thin slices. Then just assemble each toast. I started with the tomatoes, then avocado, then onions, drizzled with olive oil and sprinkled with sea salt and garlic powder.

Wow! Did avocado, tomato and onion really just taste that good?! Great summer sandwich- told my husband what I was making and he said he didn’t want one but once he smelled it and took a bite I had to make another for him :) I changed it up just a bit and put the garlic powder on the bread when I cooked it instead of on the veggies.
