Simple Bruschetta Chicken

Description

Quick and easy to make, but full of flavor!

Ingredients

  • 1 pound Chicken Breast Tenders (boneless, Skinless Chicken Breast Halves Or Breasts Will Work Too)
  • ½ cups Italian Salad Dressing, Divided
  • 2 Tablespoons Olive Oil
  • 2 dashes Salt
  • 2 dashes Pepper
  • 1 teaspoon Dried Basil (or 1/4 Cup Of Fresh Chopped Basil)
  • 1 cup Chopped Tomatoes
  • ½ cups Shredded Mozzarella Cheese

Preparation

Place half of the chicken in a sealed bag with 2 tablespoons of the Italian dressing and shake to coat thoroughly.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Remove chicken from the bag and put it into the skillet and season with salt and pepper. Cook until browned on both sides and cooked through. Depending on the thickness this could take up to 5 minutes per side or longer. Tenders will take less time.

Remove chicken from skillet. Put the other half of the chicken into the bag with the dressing and mix to coat. Then repeat the cooking process cooking it in the remaining olive oil.

Meanwhile, in a small bowl combine basil, tomatoes, 1/4 cup of Italian dressing, and 1/2 cup of shredded mozzarella cheese.

Once chicken is cooked, return all of the chicken to the skillet and turn heat to medium-low. Pour prepared tomato-dressing mixture over the top and cover the skillet. Cook for a few minutes longer, just until heated and cheese is melted. Serve immediately.

*Note: I have also made this successfully using balsamic vinaigrette in place of the Italian dressing.

Yum! I didn’t have any Italian so I used Greek, which made it taste less like bruschetta but was still very good.
