Description

One of our favorite pasta dishes, literally swimming in butter, vodka, crushed tomatoes, shrimp and heavy cream.

Ingredients

  • 7 Tablespoons Butter
  • ¾ cups Vodka
  • ¾ teaspoons Crushed Red Pepper
  • 14 ounces, weight Crushed Tomatoes In Puree
  • ¾ cups Heavy Cream
  • 1 teaspoon Salt
  • 16 ounces, weight Penne, Cooked Al Dente, Drained
  • 1 pound Boiled Shrimp, Shelled, Deveined
  • 4 ounces, weight Freshly Grated Parmesan Cheese
  • Chopped Fresh Basil Leaves, For Garnish (optional)

Preparation

Melt the butter in a saucepan. Stir in the vodka and crushed red pepper. Simmer for 2 minutes. Stir in the tomatoes and cream. Simmer for 5 minutes. Add the salt and mix well. Remove from the heat.

Place the penne in a warm serving bowl. Add the tomato mixture along with the shrimp and toss gently. Sprinkle with the Parmesan cheese. Garnish with chopped fresh basil leaves if desired and serve immediately.
