Description

A lightened version of scampi with whole wheat pasta.

Ingredients

  • 8 ounces, weight Whole Wheat Pasta
  • ¾ cups Margarine
  • 1 cup Chicken Broth Or White Wine
  • 2 Tablespoons Garlic, Minced
  • 1 pound Shrimp, Peeled And Deveined
  • 2 Tablespoons Water
  • 3 Tablespoons Cornstarch
  • ½ cups Grated Parmesan Cheese
  • 1 teaspoon Cajun Seasoning
  • 1 Tablespoon Parsley, Chopped

Preparation

In a large pot, boil some water and cook pasta according to package instructions.

Meanwhile, melt butter/margarine in a saucepan. Add chicken broth or white wine. Add garlic and cook until tender. Add shrimp and cook until pink.

In a small bowl, combine water and cornstarch until well mixed. Add to shrimp mixture and stir well. Add cheese and stir until melted.

Serve shrimp mixture over pasta. Top with Cajun seasoning and chopped parsley.

Very yummy. Very simple. I would cut back on the butter/wine/broth just a bit, though. It ends up with a little too much sauce. Cut back on the sauce and add a little more pasta and you have a perfectly simple and delicious meal. Thanks!

(PS. My kids loved it, too! Automatic hit!)
