Description

One of my favorite things to eat is Shrimp Scampi. I’ve come up with a pretty great version of it and wanted to share! I hope you like it!

Ingredients

  • 1 pound Angel Hair Pasta (Barilla Is Best)
  • 1 pound Frozen Shrimp, Peeled And Deveined
  • 2 Tablespoons Butter (Salted Or Unsalted - Your Choice)
  • 6 cloves Garlic, Chopped
  • 1 bunch Green Onions, Chopped (green Part Only)
  • 1 whole Tomato, Diced
  • 3 Tablespoons Parmesan Cheese

Preparation

Thaw shrimp according to package directions.

Bring a large pot of water to boil and cook pasta according to package directions. Drain.

In a pan, melt butter. Add shrimp and garlic. Saute until shrimp are pink and garlic is translucent—you don’t want to burn the garlic, and if you cook the shrimp too long, they get chewy! Three minutes should be plenty.

Take off heat and add green onions and tomato.

Put pasta in a serving dish and pour contents of pan over the pasta. Sprinkle parmesan cheese on top and enjoy!

Delicious!!! I made this tonight for Valentine’s Day and we loved it! I substituted smaller shrimp and small sea scallops for the prawns. It was pleasantly flavorful with very little fat. Will make it again!
