Description

Seasoned shrimp is combined with cool cilantro pesto mayo for a perfect summer sandwich!

Ingredients

  • FOR THE CILANTRO PESTO:
  • ¾ cups Cilantro
  • ¼ cups Parsley
  • 2 cloves Garlic, Peeled And Chopped
  • 2 Tablespoons Pine Nuts
  • ¼ cups Parmesan Cheese
  • ½ cups Olive Oil
  • FOR THE SHRIMP:
  • ½ cups Flour
  • 1 teaspoon Paprika
  • Salt And Pepper
  • 2 Tablespoons Olive Oil
  • 1 pound Uncooked Shrimp
  • FOR THE SANDWICH:
  • ½ cups Mayonnaise
  • 4 whole Kaiser Rolls
  • 1 bunch Bibb Lettuce
  • 1 whole Tomato

Preparation

For the pesto: combine all ingredients in a food processor. Pulse until smooth.

For the shrimp: In a bowl combine flour, paprika, salt and pepper. Heat oil in a large skillet. Dredge shrimp in flour and cook in batches in the hot skillet, about 2 minutes per side. Drain.

In a separate bowl, combine pesto and 1/2 cup mayo.

To assemble, hollow out roll if necessary. Place lettuce and tomato on bottom, top with shrimp and smear top with pesto-mayo mixture.
