Description

Shrimp and Scallop Tacos with a Mango Black Bean Salsa.

Ingredients

  • FOR THE TACOS:
  • ½ pounds Medium Scallops
  • ½ pounds Medium Shrimp With Tail On And Deveined
  • 3 Tablespoons Olive Oil
  • Flour Tortillas, To Serve
  • ½ cups Grated Cheese
  • Cilantro For Garnish
  • _____
  • FOR THE SEAFOOD MARINADE:
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Brown Sugar
  • ½ whole Lemon, Zest And Juice
  • 1 Tablespoon Ground Cumin
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

  • FOR THE SALSA:
  • 1 can (15 Oz. Can) Black Beans
  • 1 whole Mango
  • 1 bunch Cilantro, Chopped
  • ½ whole Lemon, Juiced
  • 3 ounces, fluid Lime Juice
  • 1 Tablespoon Olive Oil
  • 2 Tablespoons White Vinegar
  • 1 teaspoon Sugar
  • 1 Tablespoon Honey

Preparation

Combine the scallops and shrimp with the marinade. Marinate seafood and allow to sit for 10–20 minutes.

In a large bowl, combine the mango and black bean salsa ingredients. Set aside.

To prepare the tacos, coat a pan with the olive oil. Sauté the shrimp and scallops over medium heat (about 4 minutes each side).

To serve, warm tortillas then spoon salsa onto each tortilla, place scallops and shrimp on top. Fold in half and garnish with grated cheese and cilantro.
