Description

A quick and easy tamale pie using some pantry staples.

Ingredients

  • 1 pound Ground Beef
  • 1 package (1 Oz. Packet) Taco Seasoning (or You Can Make Your Own)
  • 15 ounces, weight Canned Whole Kernel Corn, Drained
  • 10 ounces, weight Canned Tomatoes With Green Chiles (Rotel)
  • 1 cup Chopped Green Or Red Bell Pepper
  • 3 cups French Fried Onions (from A 6 Oz. Can), Divided
  • 8-½ ounces, weight Corn Muffin Mix (I Used Jiffy)
  • ½ cups Shredded Cheddar Cheese

Preparation

Preheat oven to 400 degrees.

Brown beef in large skillet; drain. Stir in taco seasoning, corn, Rotel, bell peppers, and half of the fried onions. Pour mixture into a 2-quart oblong baking dish.

Prepare corn muffin mix according to package directions. Spoon batter on top of the beef mixture. Bake, uncovered, for 25 minutes or until corn bread is golden. Top with cheese and remaining fried onions.

Bake uncovered for 1 minute or until onions are golden.

I made this for dinner tonight. I didn’t have any fried onions on hand but it came out very tasty all the same. Next time I think I would use an additional box of cornbread mix for more coverage. This hit the spot!

Delicious! And super easy. I didn’t add the onions on top because I didn’t have enough(half the can was already gone from another recipe) but it still came out yummy. I also topped it with a little sour cream.
