Fresh Meal Fridays is an incentive to help you and your little ones prep quick and bake fresh meals. These meals are geared toward being healthy and having fun.
1. Peel and dice the potatoes Add them to a boiling pan with the water and let them boil until the potatoes are just-barely tender.
2. While potatoes are boiling, you can multitask because who has time to wait—grease a small pan with the oil. Whisk eggs and season with salt and pepper.
3. Once potatoes are just-barely tender, remove from water and add to the greased pan. Add sausages and eggs.
4. Place pan in oven (I used my toaster oven because it fit) at 425ºF until it is set and golden. Serve in wedges with garden-fresh salsa or a freshly-tossed salad.
