Description

Rated delicious! I love sausage and peppers. This is a great meal for any day of the week.

Ingredients

  • 5 whole Italian Sausage Links (I Used Mild Turkey Sausage)
  • 1 whole Green Bell Pepper, Seeded And Sliced Into 3/4 Inch Strips
  • 1 whole Red Bell Pepper, Seeded And Sliced Into 3/4 Inch Strips
  • 2 whole Red Onions, Sliced
  • 1 Tablespoon Oregano
  • 1 Tablespoon Parsley
  • 1 pinch Salt And Pepper, to taste
  • 2 Tablespoons Cooking Oil
  • 5 whole Hoagie Rolls
  • 5 Tablespoons Light Mayonnaise (optional)

Preparation

Preheat grill. Place sausages on the grill for about 15 minutes, turning occasionally. Grill until brown. Set aside when done.

Heat a saute or frying pan over medium high heat. When hot place the peppers and onions into a saucepan, sprinkle in the oregano, parsley, salt and black pepper and then drizzle with the cooking oil. Stir the mixture every few minutes and continue cooking until the peppers and onions start to soften – about 15 minutes.

Spread mayo on each side of the hoagie roll, place one sausage link in the hoagie roll, then top with the peppers and onions.

I just had something very similar to this – a friend brought it to our sewing day. She grilled the sausage just until brown, then put them in a crock pot with green, red and yellow peppers, onions, and sliced fennel. No extra liquid was necessary – after a few hours the sausages were cooked through, the veggies were soft, and it was absolutely delicious. Now I don’t know which version to try!

I made this last night and it tasted great! (left out the mayo) My husband loved it and I got to try something different for a change. I’ll definitely make this again. Thanks!

The peppers added a sweet taste to the peppers. This probably would have tasted better if I used the fresh oregano I have growing in my garden. I used a dried herbs I had already in the kitchen cabinet. next time I’ll have to add a condiment other then mayo.
