Description

Tender sausage and peppers – not in red sauce.

Ingredients

  • 1 package 6 Hot Italian Sausage Links
  • 1 whole Large Onion
  • 4 whole Bell Peppers, Any Color
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Fresh Pepper
  • ¼ cups Fresh Parmesan Cheese

Preparation

Begin by frying the sausage (hot or sweet or both) in a deep sided frying pan. Fry them over medium heat for about 10 minutes til cooked through. Set aside on a plate.

In the meantime, slice the peppers and onions into long strips (like two coffee stirrers put together). Add the peppers and onions to the UNcleaned sausage pan and cook over medium-high heat for 8-10 minutes or so until they brown on the edges and are starting to soften.

Meanwhile slice the sausage diagonally about the thickness of 3 quarters (the coins). Turn the heat down to medium-low, add the sausage in with the peppers and onions, add the salt and pepper and let cook (covered) on the stove top for about 20 minutes or so. Finally add that lovely Parmesan cheese and allow it to cook for another 5 minutes.

Serve with buttery rice and homemade garlic bread!
