Sweet, tangy, and spuh-ICY. These chicken legs are like candy that can hurt you. Yum!
Note: for almost-witty ramblings and photos, check out the related blog post link.
Rinse chicken legs and pat dry.
Place chicken in a baking dish, not too crowded together. Sprinkle with salt and pepper. Roast uncovered in a 375-degree oven for 30-35 minutes (until mostly done).
While the chicken is cooking, mince up your fresh habanero pepper. Please, please be careful. Use gloves if you can, fork and knife if gloves are not available. Habanero is not to be trifled with, but it’s oh so delish!
Add apricot preserves, water, and habanero to a small saucepan. Simmer until it’s all incorporated and smooth and runny, like a good glaze should be.
When time is up on the chicken, pull it out of the oven and brush all over with the glaze. Use every last bit of the stuff.
Pop the glazed drumsticks back into the oven for another 10-15 minutes until cooked through, when the meat starts to pull away from the bone.
Enjoy!
