Description

Roasted salmon with potatoes, green beans, carrots and leeks tidily wrapped up in foil for easy prep and easy cleanup.

Ingredients

  • 4-½ pounds Salmon Fillet
  • 2 cups Red Potatoes, Cubed
  • 1 cup Carrot, Sliced
  • 1 cup Green Beans
  • 1 cup Leeks, Sliced
  • ¼ cups Soy Sauce
  • ¼ cups Olive Oil
  • 1 teaspoon Dill
  • ½ Tablespoons Basil
  • ½ teaspoons Salt/pepper

Preparation

Preheat oven 450 degrees. Mix soy sauce, olive oil, herbs and salt and pepper in a bowl. On a cookie sheet, unwrap a large sheet of foil.

Boil the potatoes, carrots and green beans in a pot of water just until tender.

Place salmon in the middle of the foil and evenly distribute vegetables around and on top of the salmon. Bend up the edges of the foil and pour the soy sauce mixture over everything. Fold the edges of the foil tightly around the salmon, as it will steam in the oven. Cook for 20 to 30 minutes or until the salmon is done.

Great served with wild rice or couscous.

Big hit with the family last night. Which is great considering my oldest son says that he hates salmon. I did add a few of my own spices, I am from South Louisiana and we like a little kick to our food. Thanks for sharing the great recipe!

THIS WAS DELICIOUS! Made this last night, the only subs I made were Tilapia for the Salmon. I’ll be making this quite often, can’t wait to eat the leftovers today for lunch! Thanks for such a yummy, and healthy, recipe
