Description

When paired with butter, shallots, and lemon, the tarragon turns a simple salmon fillet into something extraordinary.

Ingredients

  • 4 whole Salmon Fillets (5-6 Oz Each)
  • 1 pinch Kosher Salt
  • 1 pinch Freshly Ground Black Pepper
  • ¼ cups Olive Oil
  • 4 Tablespoons Unsalted Butter
  • 3 Tablespoons Chopped Shallots
  • ½ whole Large Lemon, Juiced
  • 3 Tablespoons Chopped Fresh Tarragon

Preparation

Season the fillets of salmon with salt and pepper. Heat a large skillet over medium-high heat. Add olive oil and then add the salmon, skin side down.

Cook until the salmon is cooked almost all the way through, about 4-5 minutes. Flip the salmon and cook for about 2 more minutes, or until the salmon is just cooked through. Place the salmon on a plate and set aside.

Pour the excess oil out of the pan and place the pan back on the stove, over medium heat. Add 4 tablespoons of butter to the pan.

Once the butter melts, add the chopped shallots and squeeze in the lemon juice. Add the chopped fresh tarragon, season the sauce with salt and pepper, and cook for 1 minute.

Plate the salmon, spoon the sauce over each piece, and serve immediately.

I made this for lunch today, and it was amazing! The sauce is pretty fantastic, I’ll definitely have to make this again.

I almost never cook salmon on the stovetop, it’s usually oven or grill. This recipe made me change my way of thinking! Perfect moist salmon with an amazing crust and simple, devine sauce. Thank you!
