Description

A great way to eat grilled salmon. Soba noodles (a mix of buckwheat and wheat flour) are really healthy and cook very quickly.

Ingredients

  • 1 whole Salmon Fillet
  • 1 Tablespoon Sesame Oil
  • 1 Tablespoon Sesame Seeds, Toasted
  • 1 whole Carrot, Thinly Sliced
  • 2 pinches Salt, Black Pepper
  • 1 cup Frozen Edamame
  • 8 ounces, weight Soba Noodles
  • 1 stalk Green Onion, Sliced (Optional, For Garnish)

Preparation

Preheat the oven to 350F. Pour some sesame oil in a skillet and once the oven has reached 350F, put it in the oven.

When the oil is hot (it should look thinner to you), put the salmon fillet on the skillet , sprinkle with sesame seeds and cook it in the oven for 10-15 minutes (depending on how you like your salmon and how thick the fillet is).

In the meantime, pour water in a pot. Add the carrot, salt, and boil the water. When the water is boiling (and you are ready to eat), add the edamame and soba noodles to the water. Cook the soba noodles for 3-4 minutes.

Put salmon on top of the noodles and carrots and serve immediately.
