Description

The combination of sweet honey, tart apples, and the richness of balsamic vinegar are a perfect compliment to the strong flavor of salmon.

Ingredients

  • 4 whole Salmon Fillets Or Steaks (about 1 Pound)
  • 2 teaspoons Olive Oil
  • 2 whole Granny Smith Apples, Peeled, Cored, And Chopped
  • 2 Tablespoons Balsamic Vinegar
  • 2 Tablespoons Honey
  • 2 Tablespoons Fresh Snipped Basil, Mint, Or Rosemary

Preparation

Preheat broiler with rack 4 inches from heat. Place salmon fillets on a baking sheet coated with cooking spray. Broil for 8-9 minutes or until opaque throughout.

Meanwhile, heat oil over medium heat in a nonstick skillet. Add apples and cook, stirring a few times, for about 5 minutes or until soft, but not mushy. Stir in the vinegar and honey, cook for another 1-2 minutes.

Serve the mixture over the salmon and top with herbs of your choice. (I also like to serve this dish with a side of Brussels sprouts sautéed in butter.)

@piescientista – oooh, a sprinkle of coriander sounds good, too. I’m always wondering what to do with that spice.

I make a salmon dish baking it with sliced apples and a sprinkle of coriander. It’s tasty so I will definitely give this apple + salmon dish a try.
