Description

Healthy salmon croquettes for a quick weeknight meal.

Ingredients

  • 2 whole Eggs
  • 1 can (15 Oz. Size) Red Salmon, Pick Through It And Remove Bones
  • 1 container 6-ounce Container Non-fat Greek Yogurt
  • 1 whole Zucchini, Finely Chopped
  • ½ cups Red Onion, Chopped
  • 1 whole Bell Pepper (red Or Orange), Stem And Seeds Removed Then Finely Chopped
  • 2 cloves Garlic, Finely Chopped
  • 3 whole Green Onions, Finely Chopped
  • 1 whole Jalapeno, Stem And Seeds Removed Then Finely Chopped
  • ½ cups Fresh Parsley, Finely Chopped
  • 1 cup Panko Breadcrumbs (or Homemade)
  • 1 whole Lemon, Juiced
  • ½ teaspoons Salt
  • ½ teaspoons Pepper
  • 2 Tablespoons Olive Oil, For Pan Frying

Preparation

In a large bowl, whisk eggs. Add in all remaining ingredients (except the oil, which you’ll use in the pan) and stir together until combined.

Using your hands, form patties with the mixture. They will feel a bit moist, but should hold together during frying. If they are too crumbly, add more bread crumbs.

Over medium high heat, warm olive oil in a deep skillet. Pan fry the patties in batches, for about 4 minutes per side. When done, remove them to a paper towel-lined plate to allow the grease to drain while you finish frying the rest.
