Healthy salmon croquettes for a quick weeknight meal.
In a large bowl, whisk eggs. Add in all remaining ingredients (except the oil, which you’ll use in the pan) and stir together until combined.
Using your hands, form patties with the mixture. They will feel a bit moist, but should hold together during frying. If they are too crumbly, add more bread crumbs.
Over medium high heat, warm olive oil in a deep skillet. Pan fry the patties in batches, for about 4 minutes per side. When done, remove them to a paper towel-lined plate to allow the grease to drain while you finish frying the rest.

Shrimp (“camarones” in Spanish) are one of my favorite foods to cook. This easy to make relleno sauce complements the shrimp well and goes great with a Lowcountry favorite—rice! The ingredients are items found in most pantries so give this a whirl for a little “South of The Border” flavor.
