My friend at work brought me a wonderful church cookbook to look at and this recipe caught my eye. It was her father’s favorite.
Preheat oven to 350ºF. Spray an 11×7 casserole dish with cooking spray. Layer the ingredients into the dish in this order: half of the browned ground beef, half of the chopped onions, half of the potato slices, half of the green peppers, half of the tomato soup. Repeat layering with the rest of the ingredients.
Cover dish with foil and bake for 35 minutes, remove foil and bake an additional 10-15 minutes. Remove it from the oven and let it stand a few minutes before serving.
Cauliflower and Italian sausage come together with just a few ingredients for a filling and healthy one-pot dinner everyone will love! Suitable for paleo and gluten-free diets as long as the sausage meets those requirements!
