Description

Another recipe my friend Teach James left me, as I took care of her the last few years she lived. She was a wonderful person and had some great recipes! Serve this over rice, pasta, etc.

Ingredients

  • FOR THE MEATBALLS:
  • 2 pounds Lean Ground Beef
  • 2 cups Bread Crumbs
  • 2 whole Eggs
  • ½ cups Milk
  • 1 teaspoon Lemon Rind, Grated
  • 2 teaspoons Minced Onion
  • 1 clove Garlic, Pressed Or Minced
  • 2 teaspoons Worcestershire
  • 1 teaspoon Salt
  • 2 Tablespoons Olive Oil (for Cooking The Meatballs)
  • FOR THE SAUCE:
  • 1 whole Bell Pepper, Stem And Seeds Removed, Chopped
  • 3 Tablespoons Flour
  • 2 cups Sour Cream
  • 4 cups Canned Diced Tomatoes

Preparation

Mix all of the meatball ingredients together (everything except the oil) in a large bowl then form into your preferred size of meatballs. Heat the oil in a large skillet over medium heat. Brown meatballs on all sides (you don’t have to cook them all the way through).

Remove meatballs from the skillet and place in a casserole dish. In the same skillet, saute chopped bell pepper until nice and soft. Stir in flour and mix to coat the peppers and cook away some of the flour taste. Add tomatoes and sour cream. Cook until thick, then pour over the meatballs and bake in a 300 F oven for 30 minutes.

Made these earlier this week and chose 1 lb obeef and 1 lb of pork instead of the 2 lbs of beef. Was sooo delish with garlic mashed potatoes and steamed veggies!
