Description

Ropa Vieja is a traditional Cuban dish, usually made with flank steak, but I only had pot roast. It is cooked until very tender and it shreds, which is why it is called Ropa Vieja. Ropa Vieja translates to ‘ragged clothes’ or ‘old clothes.’ It’s very yummy, can be served over rice or even used as a filling.

Ingredients

  • 3 pounds Pot Roast Or Flank Steak
  • 2 Tablespoons Olive Oil
  • 2 teaspoons Adobo (estimate)
  • 1 cup Beef Broth
  • ¼ cups Sofrito
  • ¼ cups Recaito*
  • 1 envelope (about 1 Oz.) Sazon, Sin Achiote
  • 1 whole Medium Onion, Sliced
  • 3 cloves Garlic, Chopped
  • 10 whole Pimento Stuffed Olives
  • 2 whole Carrots, Peeled And Sliced
  • 1 can (14.5 Oz. Can) Fire Roasted Tomatoes
  • _____
  • FOR THE AREPAS:
  • 2-½ cups Milk
  • ½ sticks (1/4 Cup) Unsalted Butter
  • 1-½ cup White Arepa Flour (Precooked Cornmeal)
  • 1-½ teaspoon Kosher Salt
  • ½ teaspoons Freshly Ground Pepper
  • 1 Tablespoon Honey
  • Vegtable Oil For Frying

Preparation

Drizzle pot roast with olive oil and season with adobo. Pour beef both into the slow cooker with sofrito, recaito and Sazon.

Place pot roast in the slow cooker. Put onions, garlic and olives over the pot roast.

Set on LOW for 10 hours or HIGH for 6.

Two hours before it’s done, toss in carrots and can of tomatoes.

To make the AREPAS –

Bring milk to a simmer in a small saucepan, then remove from heat and stir in butter.

Combine arepa flour, salt and pepper in a large bowl. Add the hot milk and honey and stir until combined.

Let mixture stand until milk is absorbed enough for a soft dough to form, about 1 to 2 minutes (dough will continue to stiffen).

Form the dough into 12 balls (about 2 inches in diameter) and flatten between palms into 3 1/2 to 4-inch patties (about 1/3-inch thick).

Heat 2 tablespoons of oil in a large nonstick skillet over medium heat until the oil begins to shimmer. Fry 4 arepas at a time, until lightly golden brown on both sides and just cooked through, about 2 to 3 minutes per side. Transfer to a baking sheet lined with paper towels.

I made this last night. While I might make the carrots again, the rest didn’t seem to turn out for me.
