Description

I don’t know where the name came from, but these little mini calzones are delicious! They are a huge hit and great for company. We’re making them tonight for a night of football and friends. They warm up beautifully as leftovers and the filling possibilities are endless. We have a fun night with Root Beer Rocks, root beer on the rocks, and root beer barrel to end the night. (The use of cheese sticks is genius!)

Ingredients

  • 2 Tablespoons Yeast
  • 2 cups Warm Water
  • ⅓ cups Sugar
  • 6 cups Flour
  • 1 teaspoon Salt
  • ¼ cups Oil
  • 1 jar Pizza Or Spaghetti Sauce
  • 1 package Mozzarella Cheese Sticks
  • 1 package Pepperoni Or Canadian Bacon
  • Melted Butter, For Brushing Tops
  • 1 container Parmesan Cheese
  • Garlic Salt, For Sprinkling

Preparation

Combine yeast, water and sugar and let sit for 10 minutes. Then add the flour, salt, and oil. Knead dough and let rise for 15 to 20 minutes. Punch down. Cut dough in half and then cut each half into 8 pieces. Roll out each piece into a 6-7 inch round.

In the middle of each dough circle, place one spoonful of sauce, 4 slices of pepperoni, and half a cheese stick. Fold over and crimp the edges with your fingers (pinch tightly so you don’t have any blowouts!). Place on a baking pan. Brush melted butter on each pocket and sprinkle with Parmesan cheese and a little garlic salt.

Bake for 15 to 20 minutes at 350 F until golden brown.

These were delicious! My husband voted these as a “keeper”. I loved the taste of the dough. They only thing I would question is the 2 Tbsp of yeast. Should that be 2 tsp instead? It seemed like quite a bit but the dough rose very quickly and made a lot of it! Thanks for sharing!

These were delicious and fun to make. We did make your own so my kids had cheese, black olives and sauce in theirs. I had pineapple, bacon, cheese and sauce and hubs had extra pepperoni in his. Not too difficult but make sure you have an hour or so to make them.

This looks yummy! I might have to try this on Saturday. Also, in case you’re curious: “bierocks” are a meat-filled pastry form Eastern Europe. My husband grew up eating them, otherwise, I’d have no idea.
