This is a great healthy one dish dinner.
Slice one lemon into thin slices and place slices on the bottom of a non stick baking dish.
Mix oil, salt, pepper, garlic, Rosemary, and the juice from the other lemon in a bowl. Toss the green beans in the mixture and remove them with tongs. Layer beans over the lemons in the baking dish.
Next toss potatoes in the oil/lemon mixture and place them around the edges of the pan. Toss onions in the oil/lemon mixture and place them over green beans. Toss chicken in the remaining mixture and place on top of onions. Pour any remaining mixture over chicken.
Cover the dish with foil and bake at 400F for 40 minutes. If you want to brown the potatoes up remove chicken and place in foil, set aside. Return pan to oven and broil on HI for 2-3 minutes.
Note: If you are not a fan of strong lemon flavor omit the lemon slices and mix 1 tablespoon lemon juice with 2 tablespoons olive oil and coat the bottom of the baking dish.
