Description

Rich, flavourful, roasted tomatoes and sweet red onions tossed with pasta.

Ingredients

  • 8 cups Pasta
  • 2 pints Cherry Or Grape Tomatoes
  • 1 whole Small Red Onion
  • 4 Tablespoons Olive Oil
  • 1 Tablespoon Balsamic Vinegar
  • ½ teaspoons Sea Salt
  • ½ teaspoons Pepper
  • 4 Tablespoons Fresh Basil

Preparation

1. Preheat oven to 425F.

2. Slice tomatoes into quarters or halves. Slice red onion into 1/4″ thick slices.

3. Toss tomatoes and onions with olive oil, balsamic vinegar, salt and pepper. Spread mixture in a single layer (or close to a single layer) in a large glass baking dish.

4. Cook in the oven for about 45 minutes, stirring twice, or until the tomatoes and onions are lightly browned but not black.

5. In the meantime, cook the pasta in salted water and drain.

6. Combine pasta with tomato/onion mixture and basil. Taste and adjust seasoning if necessary. Enjoy!

Optional: serve with Parmesan cheese.

This was amazing! You don’t mention how much of an onion to do, so I just chopped up a whole medium sized red, and it was perfect! This smelled amazing while the tomato/onion mixture was baking – I was drooling! I’m contemplating maybe adding some garlic to it next time, but I also don’t want to mess with a good thing!

I made this recipe last night because I had tomatoes and not much else for pasta! It turned out great!

This is fabulous!!!! I had some grape tomatoes to use and I saw this recipe. YUM! It’s a great dish for summer. Nice and light. I used goat cheese in mine. Delicious!!!
