Description

This is the ultimate recipe for that piece of meat that either tends to get dry and/or tough. You will definitely make your family very happy with this dinner.

Ingredients

  • 4 pounds Beef Roast - Pikes Peak Or Rump
  • 2 cans (10.75 Oz. Can) Cream Of Mushroom Soup
  • 1 can (10 Oz. Can) Ro*tel Tomatoes
  • 1 package (1 Oz. Packet) Dry Onion Soup Mix
  • 1 cup Chopped Green Onions
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Black Pepper
  • 2 cups Water

Preparation

In a 16-quart roaster or cast iron Dutch oven, mix all the ingredients (excluding the roast). Dilute with water to the consistency that you like your gravy. Place roast in the gravy and spoon the gravy over the roast. Place in a 350F (180C) oven for 1 1/2 hours. Remove and turn the roast and place back in the oven for 1 hour. Remove the roast and slice in 1/4-inch slices across the grain. Place back in the gravy, cover and bake for 45 minutes to 1 hour.

The roast beef will be tender enough to cut with a fork.
This is delicious served with mashed potatoes and fresh rolls or garlic bread.

Note: the roast can be from 4-6 pounds.
