Preheat oven to 350 degrees (375 if you want to substitute 4 boneless skinless chicken breasts -instead of the tenderloins- I usually pound mine out a bit if I use the full breast- EITHER way works great!)
Grease a 9 x 13 Pyrex dish, and then set up an assembly line:
I Pour the Ranch onto a large Plate, and next to that I have a plate of Crushed up Ritz Crackers. Last I have the greased Pyrex dish ready to go.
I season my chicken w/ Salt & Pepper (add the OPTIONAL Cayenne if you like a little kick- but it’s definitely not necessary) I originally made the recipe w/ just Salt & Pepper.
Next, dip the seasoned chicken into the ranch ‘bath’ and coat well. Then it’s onto the Ritz cracker bits! Make sure you roll it around until it’s completely covered… you won’t regret it!
Last, line them all up in the greased Pyrex pan. If you want to add the Optional Dash of Parmesan Cheese- go ahead and do that now. If you don’t have it- it’s also not necessary. You’ll be shocked at how tasty it is with JUST the ranch dressing/Ritz mixture.
Pop the pan in the oven and bake for 35-45 minutes (if you used the tenderloins- they obviously fall on the shorter end of the cooking time frame). Just test one to make sure it’s cooked all the way through! I serve mine w/ a side salad & sweet potato fries. Use whatever floats your boat! ENJOY!
