Description

Reuben club sandwiches with apple slaw may not be exactly what you are used to, but they are delicious and packed full of flavor and texture!

Ingredients

  • FOR THE DRESSING:
  • ½ cups Mayonnaise
  • ¼ cups Sour Cream
  • ¼ cups Chile Sauce
  • 2 Tablespoons Ketchup
  • 2 Tablespoons Sweet Pickle Relish
  • 2 dashes Worcestershire Sauce
  • 1 teaspoon Sugar
  • 1 teaspoon White Vinegar
  • 1 Tablespoon Yellow Onion, Minced
  • 1 clove Garlic, Finely Minced
  • ½ teaspoons Smoked Paprika
  • ½ teaspoons Kosher Salt
  • ½ teaspoons Black Pepper
  • FOR THE APPLE SLAW:
  • ¼ cups Apple Cider Vinegar
  • ½ cups Mayonnaise
  • ½ cups Sour Cream
  • 1 Tablespoon Dijon Mustard
  • 1 Tablespoon Poppy Seeds
  • ½ cups Honey
  • 1 teaspoon Kosher Salt
  • ½ teaspoons Black Pepper
  • ½ heads Red Cabbage, Julienned
  • ½ heads Green Cabbage, Julienned
  • 4 whole Carrots, julienned
  • 3 whole Gala Apples, Peeled, Cored And Julienned
  • FOR THE SANDWICHES:
  • 24 slices Sandwich Bread
  • 2 pounds Pastrami, Deli-style And Sliced
  • 1-½ pound Baby Swiss Cheese Slices

Preparation

In a small bowl, whisk together all of the ingredients for the dressing until thoroughly combined. Cover and refrigerate until ready to use.

In a small bowl, whisk together the apple cider vinegar, mayonnaise, sour cream, Dijon mustard, poppy seeds, honey, salt and pepper.

In another larger bowl, toss together the cabbages, carrots and apple. Drizzle the dressing onto the veggies and toss to combine. Cover and refrigerate until you are ready to use.

Now you will assemble your sandwiches. Starting with one slice of bread, lay a slice of Swiss cheese on it then top with your desired amount of the pastrami. On a second slice of bread, spread the dressing onto both sides and lay that on top of the pastrami. Top the second slice of bread with another slice of Swiss cheese and then top with the apple slaw. Spread the dressing onto one side of the third slice of bread and lay it on top of the slaw (dressing side down). Repeat making the rest of the sandwiches in a similar fashion. Cut each sandwich in half and serve. Enjoy!
