Description

Simple and delicious!

Ingredients

  • 1  Onion, Chopped
  • 1 pound Sausage, Such As Linguica, Chorizo, Italian
  • 1 Tablespoon Olive Oil, Plus More To Serve
  • 5  Potatoes, Peeled And Diced (or 2 15-ounce Cans Cannellini Beans, Drained)
  • 4 quarts Water Or Chicken Broth
  • Salt And Pepper, to taste
  • 1 pound Kale, Washed, De-stemmed, And Torn Or Roughly Chopped

Preparation

In a heavy soup pot (I use a Dutch oven), sauté onions and sausage together with olive oil until onions are translucent and sausage is almost cooked through. Add potatoes (or beans) and water or chicken broth. Bring to a boil.

When the potatoes are almost done, season broth with salt and pepper to taste, then add kale. Cover and simmer for another 5–10 minutes, until kale is softened to your liking. Ladle into bowls and drizzle with olive oil.
