I always have black beans in my pantry in one form or another. This recipe uses the canned variety, and when you add some spices and cook over low heat, it makes a really tasty “refried” mixture for burritos.
Mix beans, pepper, garlic, cumin, and black pepper together in a saucepan. Bring to a slow boil and turn the heat down very low. Let simmer for approximately 20 minutes. Stir to keep the mixture from burning and sticking to bottom of the pain. Discard green pepper before serving (this was used strictly for flavoring purposes).
Warm tortillas in microwave for a few seconds and divide the beans evenly among the four tortillas. Top with cheese. Enjoy!
