Description

A peanuty noodle dish with a fiery kick!

Ingredients

  • ½ pounds Whole Wheat Spaghetti
  • ½ blocks (about 12 To 14 Oz. Size) Tofu, Cubed
  • 1 cup Bean Sprouts
  • 1 whole Onion
  • 1 whole Shredded Carrot
  • 1 cup Shredded Cabbage
  • _____
  • FOR THE SAUCE:
  • ¼ cups Peanut Butter
  • 1-½ Tablespoon Lime Juice
  • 1 Tablespoon Red Curry Paste
  • ⅓ cups Veggie Stock
  • 1 Tablespoon Chopped Ginger
  • 1 teaspoon Chopped Garlic
  • 1 pinch Salt And Pepper

Preparation

In a large pot of salted boiling water, cook your noodles as you usually would, or as instructed on the package.

Toss the sauce ingredients into a blender and give it a good puree. Now your amazing sauce is ready!

Cook up your tofu and veggies in a pan. When your noodles are ready, drain and toss all the fixings together. Sprinkle with some cilantro, peanuts and lime and let the eating adventure begin.
