Description

In Thailand, this is referred to as ‘Penang Gai’. If you like your food really spicy, add more red curry paste.

Ingredients

  • 1 Tablespoon Vegetable Oil
  • 3 Tablespoons Red Curry Paste
  • 1 can (398ml Size) Coconut Milk, Divided
  • 4 cups Boneless, Skinless Chicken Breasts, Cut Into Cubes
  • 1 Tablespoon Brown Sugar
  • 2 teaspoons Fish Sauce
  • 1 teaspoon Powdered Chicken Bouillon
  • ½ cups Chopped Fresh Basil (optional)
  • 4 cups Cooked Basmati Or Jasmine Rice, To Serve

Preparation

Step 1: In a large frying pan over medium heat, add the vegetable oil. Then add the red curry paste. Chop up the paste with a wooden spoon.

Step 2: When you can really start smelling the red curry cooking, add about 1/2 of the coconut milk. Mix together. Now add the chicken, mix together and cook for 5 minutes.

Step 3: Add some more coconut milk, along with the sugar, fish sauce and chicken bouillon. If you find the sauce is really bubbling, lower the heat a little.

Step 4: Add the rest of the coconut milk. Mix together and cook for another few minutes. Add the fresh basil at the end if you are using it.

Serve with Basmati or Jasmine rice.

This was pretty good! I followed the directions exactly except for adding some red bell peppers and broccoli, as others had suggested. It turned out very pleasant, but we were surprised that there wasn’t much sauce, and the flavor was extremely mild – did not have a very noticeable curry flavor. If I make this again, I’ll double the amount of coconut milk and curry paste and will probably add a bunch of garlic. Yum!

We loved this recipe! Super easy and super yummy! We added broccoli and red pepper flakes to spice it up a bit. This is definitely a keeper!

This is the first time I’ve tried a Thai-ish dish too. It was super easy and delicious! I added zucchini and red bell peppers for veggies. Loved it.
