Quick, easy, tasty chicken curry.
1. Cut the chicken into strips and mix with the flour, soy sauce and some freshly ground pepper.
2. Fry the chicken in batches till partially cooked and browned, and remove from pan/wok.
3. Add the curry paste to the hot wok and fry for 2 minutes. Add in the coconut milk, peanut butter and fish sauce and stir.
4. Return chicken to the pan and cook until chicken is cooked.
5. Serve with rice, garnished with fresh basil leaves.
