Description

Light yet hearty red beans and rice.

Ingredients

  • 2 cups Red Beans (if You Opt For Dry, You'll Have To Soak Overnight)
  • 4 teaspoons Olive Oil
  • 1 whole Onion
  • 3 cloves Garlic, Minced
  • 1 pound Smoked Turkey Sausage, Halved Or Diced
  • 1 teaspoon Dried Thyme
  • ½ teaspoons Cayenne Pepper
  • 2 cups Steamed Rice (opt For Brown If You Choose)

Preparation

1. Heat the olive oil in a large, heavy-bottomed pot over medium heat. Add onion and garlic and sauté until tender, around 6 minutes.

2. Stir in turkey sausage, thyme and cayenne and sauté for 2 minutes. Add beans and simmer over medium-low heat until beans are creamy, around 20 minutes. Serve over steamed rice.

Made this last night using canned red beans (added an extra 1/4 c. of water so the beans wouldn’t be dry or tough) and left out the sausage since we’re vegetarians. It was a hit! We will have this again–and soon!

I was searching for a quick and easy Red Beans & Rice recipe and was about to give up because I couldn’t find one using canned beans! I had some kidney beans left over from making chili a few weeks ago. I also used some Hillshire Farm Andouille sausage. (Foodie I am not, apparently).

This recipe was quick, easy and came out great. The sausage added all of the bite and real flavor, so if you don’t use something like that I would recommend upping the spices and heat.
