Description

Delicious comfort food.

Ingredients

  • 16 ounces, weight Kielbasa (Smoked Sausage), Cut Into 1/4" Slices
  • 1 whole Onion, Chopped
  • 1 whole Green Bell Pepper, Chopped
  • 2 cloves Garlic, Minced
  • 2 cans (15 Oz. Can) Dark Red Kidney Beans, Drained
  • 1 can (16 Oz. Can) No-salt-added Diced Tomatoes
  • ½ teaspoons Oregano
  • ½ teaspoons Cumin
  • 1 teaspoon Worcestershire Sauce
  • 1 teaspoon Cajun Seasoning
  • 2 whole Bay Leaves
  • ¼ teaspoons Sage
  • ½ teaspoons Pepper
  • ½ teaspoons Thyme
  • Salt To Taste
  • 2 cups Rice
  • 4 cups Water

Preparation

1. Cook 2 cups of rice and 4 cups water in a medium saucepan (or rice cooker).

2. In a large skillet or dutch oven over low heat, cook sausage for five minutes.

3. Stir in onion, green pepper, and garlic; sauté until tender.

4. Pour in beans, tomatoes, and seasonings.

5. Simmer uncovered for 20 minutes.

6. Mix rice into bean mixture and serve!
