Really Good Meatloaf

Description

I like meatloaf, but I usually have to put extra ketchup on it. When I realized I only had enough for the top, I had to come up with a flavorful loaf that required no extra sauce. This is it!

Ingredients

  • 2 Tablespoons Butter
  • ¼ cups Onion, Diced
  • ¼ cups Carrot Finely Diced
  • 2 cloves Garlic, Minced
  • 1 Tablespoon Worcestershire
  • ⅔ cups Oatmeal Or Breadcrumbs
  • 1 whole Egg
  • 1 teaspoon Sea Salt
  • ½ teaspoons Black Pepper
  • ¼ teaspoons Basil, Dried
  • ¼ teaspoons Oregano, Dried
  • 6 ounces, fluid Tomato Juice
  • 1 pound Lean Ground Beef
  • Ketchup, For The Top

Preparation

Preheat oven to 350ºF.

Melt butter in a sauce pan on medium high heat. Add onions, carrot, garlic and sauté until soft. Add the Worcestershire and cook for 2 minutes. Remove from heat and set aside.

In a medium-sized mixing bowl, mix together the oatmeal, egg, salt, pepper, basil, oregano, and tomato juice. Let it sit for a minute, so the oatmeal absorbs the liquid. Add the meat and vegetable mixture to bowl and mix just until you get an even combination.

In a greased loaf pan, evenly spread the meat mixture. Spread a thin layer of ketchup over the top. Bake for 1 hour.

This is more than a really good meatloaf..it’s downright excellent! I have 3 men in the house who’ll eat just about anything, but will definitely tell you when to repeat a recipe. Not only was this meatloaf easy to put together, it came out seriously tasty. When I said I’d make it again this week, my youngest, and MOST picky eater returned with a resounding “YESSS!”.
