Description

What if ratatouille was a sandwich?

Ingredients

  • 1 whole Eggplant
  • 1 whole Zucchini
  • 1 whole Yellow (summer) Squash
  • 3 whole Tomatoes
  • 1 whole Yellow Bell Pepper
  • 1 whole Red Onion
  • 1-½ cup Tomato Sauce
  • Grapeseed Oil, For Drizzling
  • Dried Thyme, To Taste
  • Salt And Black Pepper To Taste
  • ½ cups Cream Cheese
  • 4 slices Bread Of Your Choice, Or More If Slices Are Small
  • Fresh Basil, For Garnish

Preparation

Slice all the vegetables.

Spread some tomato sauce over the bottom of a baking dish. Arrange the vegetable slices concentrically in the baking dish. Drizzle with oil and sprinkle with dried thyme, salt and pepper.

Cover with parchment paper and bake for 45 minutes at 180ºC (355ºF).

Spread some cream cheese over each slice of bread. Place some ratatouille over each sandwich. Top with fresh basil.

Delicious! Light and tasty, I would love to serve this as an appetizer with friends in the summer. I used brie cheese (I had leftovers), and it just tasted lovely.

This is simple & delicious ~ I could not find pretty roma tomatoes so I halved some nice grape tomatoes on top. I also sub’d grated parm on top for the cream cheese. Will be making it all summer long with beautiful veggies straight from the garden!!
