Description

This is a quick and flavorful one-dish meal for when you are short on time. My husband always requests this.

Ingredients

  • 2 cups Whole Wheat Elbow Macaroni
  • 1 pound Sausage - We Use Eckrich But Any Kind You Like Works
  • 1 can (15 Oz. Can) Black Beans
  • 1 can (14.5 Oz. Can) Diced Tomatoes
  • 1 cup Frozen Corn
  • 2 pinches Cumin
  • 2 pinches Garlic Powder
  • 1 pinch Chili Powder
  • ½ cups Water
  • Optional Garnish: Shredded Cheddar Cheese, Grated Parmesan Cheese

Preparation

Add macaroni to the bottom of a large saucepan or skillet. Slice sausage into 1/4 inch rounds. I use the kind that is already pre-cooked to save on time. Add the beans, sausage, tomatoes, corn and spices to the pasta, along with the water. Bring everything to a boil, then cover and simmer for 15-20 minutes until pasta is done.

Serve with shredded cheddar cheese or grated parmesan cheese. I add a splash of Tabasco to my plate!
