Description

This is sure to satisfy any buffalo craving!

Ingredients

  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 whole White Onion, Diced
  • 6 cloves Garlic, Minced
  • 16 ounces, weight Carrots, Diced
  • 1 can (28 Oz. Size) Crushed Tomatoes
  • 1 can (16 Oz. Size) Cannellini Beans
  • 1 pound Ground Chicken Breat (or Turkey)
  • ½ Tablespoons Cumin
  • 1 Tablespoon Paprika
  • ½ cups Chicken Broth
  • ½ cups Franks Red Hot Buffalo Wing Sauce
  • Salt And Pepper, to taste
  • 1 cup Bleu Cheese, For Serving (optional)

Preparation

1. Heat the oil in a large pot over medium low heat. Add the onions and garlic. Stir until translucent and fragrant. Add the carrots and cook until soft.
2. To the vegetable mixture, add tomatoes and beans. Mix well.
3. In another pan, sauté ground chicken, adding cumin, paprika, and chicken broth until meat is cooked through and spices are well mixed. Do not drain.
4. Add chicken to vegetable mixture, stirring well to combine.
5. Stir in the Buffalo sauce and bring to a boil. Reduce heat and simmer over medium-low heat about 1 hour.
6. Season to taste with salt and pepper. Serve with bleu cheese, if using.
