Description

A one-skillet meal, ready from start to finish in 30 minutes.

Ingredients

  • 1 Tablespoon Olive Oil
  • 1  Onion, Diced
  • 5 cloves Garlic, Minced
  • 1 cup Chicken Stock (low Sodium)
  • 1 teaspoon Each Of Smoked Paprika, Garlic Powder, Pepper, Oregano
  • ½ teaspoons Garlic Salt
  • 2 cups Whole Wheat Pasta, I Used Fisilli, Or Penne Works Good Too
  • 1 cup Cherry Tomatoes, Cut In Half
  • 1 bunch Kale, Roughly Chopped
  • ½ pounds Shrimp, Peeled And De-veined
  • 2 whole Chicken Sausage Links (pre Cooked Variety), Sliced
  • ½ cups Mozzarella Cheese, Shredded
  • ½ cups Parmesan Cheese, Shredded
  • ¼ cups Whole Wheat Bread Crumbs

Preparation

Preheat oven to 450ºF.

In a large cast iron skillet, add olive oil, onions, and garlic over medium high heat. Let bloom 2 minutes. Add in chicken stock, and all the spices. Let simmer 5 minutes.

Meanwhile cook pasta according to package directions. Drain and set aside.

Add in tomatoes and let simmer 10 minutes more. Now add in kale, shrimp, and chicken sausage. Let simmer 3 minutes until kale is wilted and shrimp is no longer opaque.

Once shrimp is cooked through, taste broth and adjust seasoning if needed. Add in pasta, give it a good stir, and top with mozzarella, Parmesan cheese, and bread crumbs.

Bake 10 minutes until cheesy is melted and browned. Enjoy with crusty garlic bread!
