Description

This is a quick and easy hash recipe using chicken, onions and potatoes! Optional ingredients also include bell peppers, spinach, eggs and cheese. This recipe is brought to you by Adventures in Lunch.

Ingredients

  • 1 teaspoon Olive Oil
  • 1 teaspoon Butter
  • 1 whole Medium Russet Potato, Washed And Cubed
  • 1 Tablespoon Onion, Diced
  • ½ cups Chicken, Cubed (I Recommend Dark Meat)
  • ½ Tablespoons Garlic Powder
  • ½ Tablespoons Paprika
  • 1 teaspoon Garlic Salt
  • Pepper To Taste

  • Optional Ingredients
  • 1 whole Egg
  • ½ cups Spinach, Washed And Patted Dry
  • 1 Tablespoon Bell Peppers, Diced (any Color Would Work)
  • 2 pinches Cheese, For The Top If Desired

Preparation

Heat the butter and olive oil in a medium sized frying pan over medium heat. Once the butter is melted and the pan is hot, add the potatoes, onions, peppers (if desired) and spices. Cook for about 5 to 8 minutes and then add the chicken. Cook for another 8 to 10 minutes, until the chicken is cooked through. Remove from heat and add cheese on top, if desired. During the last two or three minutes of cooking, if you wanted to add eggs or spinach, that would be the time to do so. Make sure the spinach is washed and dried. Top with cheese, I usually use cheddar, but you can use American or whatever you have on hand.
