Description

A simple, delicious weeknight supper that you’ll come back to again and again.

Ingredients

  • 3 whole Boneless Chicken Breasts
  • ½ cups Barbeque Sauce
  • 1 whole Onion, Sliced
  • 1 whole Green Pepper, Sliced
  • 8 whole Tortillas
  • 1 cup Cheddar Cheese, Shredded

Preparation

Grill the chicken breasts, basting with your favorite barbeque sauce. We like the sweet, smoky taste of Sweet Baby Ray’s for this dish.

While the chicken grills, saute the onions and green pepper in a bit of oil. Slice up the cooked chicken. Warm the tortillas. Stuff each tortilla with grilled chicken, onions and peppers and top with cheddar cheese. Add more barbeque sauce if you like.

Yummmmmoooooo:) Made this tonight and will put this into the ole’ menu rotation. We us the Mission Carb Balance tortillas which are only 18grams of carbs per tortilla which allows me 2 for a meals:) Yeah:)

We had salad tonight but in the future will servce with bake beans or some spanish rice.

Totally recommend.

This would be really good with pork too! We frequently sautee pork with peppers and onions, but we never thought of making a taco out of it! Creative!

These were amazing and took only about a minute… The sweet baby rays BBQ sauce was perfect. With some homemade flour torillas. Yum yum yummy. I wish i made more.
