It doesn’t get much better than queso running down the side of a burger!

Ingredients

  • FOR THE MEAT PATTIES:
  • 1 pound 80/20 Ground Beef
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper
  • 1-½ teaspoon Worcestershire Sauce
  • FOR THE QUESO:
  • 8 ounces, weight Velveeta Cheese
  • ¼ cups Milk
  • ½ cups Mild Rotel Diced Tomatoes And Green Chilies, Drained
  • ¼ cups Mild Cheddar Cheese, Shredded
  • FOR THE PICO DE GALLO:
  • 1 whole Medium Tomato, Chopped
  • 3 Tablespoons Red Onion, Diced
  • 1 Tablespoon Cilantro, Diced
  • ½ teaspoons Lime Juice
  • 2 pinches Salt
  • FOR THE ASSEMBLY:
  • 3 whole Whole Wheat Hamburger Buns
  • Additional Burger Condiments Of Your Choice

Preparation

For the meat patties:
In a medium size bowl add all of the burger ingredients and use your hands to combine everything. Separate the meat into 2 or 3 patties depending on personal preference.

Heat the grill to a medium heat and cook each patty until done, about 10 minutes, flipping half way through the cook time.

For the queso:
Heat a small pot over low/medium heat. Add the cheese and milk and stir every minute or two. Once the cheese starts to melt, pour in the Rotel tomatoes along with the cheddar cheese and keep stirring until completely melted. Turn the heat off and let it sit to thicken.

For the pico de gallo:
In a small bowl combine all of the ingredients and stir. Place in the refrigerator until ready to use.

Fixing the burger
Place a piece of meat on top of the bottom bun. Spoon 2-3 scoops of the queso on top of the meat and let it run all over. Get 2-3 spoonfuls of pico and place on top of the queso and then place the top bun on top.
