I followed Ree’s cooking directions, but used chicken, and the veggies I had on hand (onion, zuch, and canned green chiles). It was still wonderful!

…by far these are the BEST! Be sure you use the butter…it makes the quesadillas.

This is one of our favorite dishes now.
So much flavor, so delicious, even beautiful to look at.
It was always a challenge for me to flip the quesadilla when cooking it on the stove. Now, I cook them in a panini (sp) press, easy peasy!

These were fantastic. I made them for vegetarian friends by omitting the shrimp (obviously), and it was so easy to prepare these both ways at the same time. Big hit at our house and full of flavor!
